Natural Pomegranate Liqueur Made in Israel
Pomegranate liqueur by Olgar Distillery is made in Israel from ripe, fresh pomegranates. It has a rich pomegranate aroma, a sweet fruity flavor, and a natural color derived from the fruit itself. The finished liqueur contains 17% alcohol.
Pomegranate liqueur is produced without added flavorings, colorings, preservatives, or yeast. The production process combines fruit preparation, fermentation, distillation, and the addition of fresh fruit at different stages.
The Liqueur Production Process
The production process of our liqueurs begins with fresh fruit delivered directly from farmers in the Galilee or the Golan Heights. The fruit is crushed, pressed, and placed in oak barrels for fermentation until alcohol is produced.
The first fermentation lasts from one month in summer to three months in winter and takes place without the addition of yeast.
First Distillation
After the first fermentation, the mixture is distilled by heating it in large vessels and tanks. During this process, alcohol vapors are created, condensed into droplets, and collected as a liquid.
After the first distillation, the distillate is returned to the barrel for an additional period of one or two months.
Second Distillation
The mixture then undergoes a second distillation, during which the alcohol is further purified and a base distillate is obtained for the next stage of production.
The resulting base distillate is diluted with mineral water using the osmosis method in order to reduce the alcohol level to between 20% and 30% at this stage of production.
Adding Fresh Fruit
Another portion of fresh fruit mixture is added to the diluted drink. In some cases, natural fruit sugar is also added. The drink then undergoes an additional fermentation process lasting approximately four months.
