Our production process begins with a careful selection of ripe fruits from the Galilee and Golan, which are crushed, juiced, and undergo a traditional double distillation. To the resulting fruit distillate, we add a carefully crafted blend of herbs, spices, and medicinal plants, creating a deep, bitter, and unique flavor profile for each type of vermouth.
Afterward, the beverage undergoes a long infusion in fruit extracts—such as citrus, dates, and citrus peels—for at least four months. The fruits used include lemon, orange, pomelo, clementine, grapefruit, and more—all grown in Kibbutz Yiftah in the Upper Galilee.
Our vermouths are developed by Valentina Levinsky, a Doctor of Forest Chemistry from the Technion and a founding partner of "Aroma Valley." She is responsible for creating the recipes and production processes, combining deep scientific knowledge with a love for medicinal plants and natural products.
