Kiwi Eau-de-vie – Natural Israeli Distilled Fruit Brandy from Kiwi

Our unique distilled alcoholic beverages are produced from fresh and pure fruits, without chemicals, preservatives, dyes, flavorings, flavor enhancers, or yeast. They are known worldwide under many names, such as Eau_de_vie (France), schnapps (Germany), grappa (Italy), țuică (Romania), slivovitz (Hungary), horilka (Ukraine), samogon (Russian), rakia (Bulgaria), etc., depending on the country of origin.

The production process of our Eau_de_vie involves delivering fresh fruits directly from farmers in the Galilee or the Golan Heights, crushing/pressing them, and subsequent fermentation in oak barrels until alcohol is obtained (from one month in summer to three months in winter) without the use of yeast.

After the first fermentation, the mixture is distilled by boiling in large tanks, and vapors form droplets of alcohol. These droplets are collected into a liquid, which after distillation is returned to the barrel for one or two months.

Then the mixture undergoes a second distillation, during which the alcohol is purified from toxins, and a base distillate is formed. It is diluted with mineral water using osmosis to bring the alcohol content to 38-45%.
