Blueberry Liqueur made from fresh blueberries
Blueberry Liqueur by Olgar Distillery is produced in Israel from fresh blueberries. The berries come from Yiftach kibbutz and are crushed and pressed before continuing through the production process.
After double distillation, fresh blueberry puree and natural fruit sugar are added to the liqueur, giving the drink its characteristic sweet and fruity flavor. The finished product contains 19% alcohol.
The liqueur is produced without added flavorings, colorings, or preservatives. No added yeast is used during the fermentation process.

The liqueur production process
The production process of our liqueurs begins with fresh fruit delivered directly from farmers in the Galilee or the Golan Heights. The fruit is crushed or pressed and placed in oak barrels for fermentation.
Without the addition of yeast, the fermentation process lasts from one month in summer to three months in winter, until the fermented base is ready for distillation.
First distillation
After the first fermentation is completed, the mixture is distilled by heating it in large tanks. During this process, vapors are formed, condensed into droplets of alcohol, and collected as a liquid.
After the first distillation, the resulting distillate is returned to the barrel for an additional one or two months.
Second distillation
After the period in the barrel, the mixture undergoes a second distillation, during which the alcohol is further purified and a base distillate is produced for the next stage of liqueur production.
The resulting base distillate is diluted with mineral water using the osmosis method in order to reduce the alcohol level to between 20% and 30% at this stage of the production process.
Adding fresh blueberries
Another portion of fresh fruit mixture is added to the diluted drink. In some cases, natural fruit sugar is also added, followed by an additional fermentation period of approximately four months.
In the production of Blueberry Liqueur, fresh blueberry puree and natural fruit sugar are added during the process. The alcohol content of the finished product is 19%.
