Our Eau de Vie process moves fresh fruit straight from Galilee or Golan farmers to crushing/pressing and fermentation in oak barrels until wash is produced (from one month in summer to three months in winter) without added yeast. After the initial fermentation the mash is distilled in large stills; the vapors condense into alcohol drops which are collected into liquid that returns to the barrel for one or two months. The mixture then undergoes a second distillation to purify the alcohol, producing a base distillate that is adjusted by osmosis with mineral water to reach a strength between 38–45% ABV.
