Fruit Liqueurs from Galilee – Authentic Taste of Israeli Nature

Our fruit liqueurs are crafted with care and passion from freshly harvested fruits that come directly from farmers in the Galilee and the Golan Heights. In this fertile region, the Mediterranean sun, clean air, and rich soil give every fruit its unique sweetness and aroma, creating the perfect foundation for a natural and balanced drink.

The process begins with crushing or pressing the fresh fruits, followed by natural fermentation in oak barrels without the use of industrial yeast. Fermentation lasts from one month in summer to three months in winter, depending on the fruit and climate conditions.

After fermentation, the mixture goes through the first distillation, during which alcohol vapors condense into pure drops of spirit. These drops are collected and returned to the barrels for one to two months of aging, allowing the drink to develop softness and depth.

Then follows the second distillation, which purifies the alcohol and results in a clean, balanced spirit. The distilled base is diluted by reverse osmosis with mineral water to achieve an ideal strength of 20–30% alcohol.

To enrich the flavor, fresh fruit is added again, and in some cases, a small amount of fruit sugar is introduced for a gentle second fermentation that lasts about four months. The result is a rich, aromatic, and smooth liqueur — the true taste of Galilean fruit and craftsmanship.
